I cook for one most nights – and I eat well. No cereal dinners because even though it’s just me … it matters.

After 40 years in the kitchen, I’ve learned this: dinner doesn’t have to be time-consuming or complicated to be delicious.

I love 20–30 minute meals, stovetop and air fryer favorites and slow cooker recipes with 5 minutes of prep. Recipes scaled for real life (you, or you + one), without a fridge full of leftovers you’re already tired of.

Because honestly? I’ll take a homemade meal, a glass of wine and zero chaos any night of the week.
